Spinach & Potato Curry

Ingredients

  • 800g potatoes, peeled, chopped into bite sized pieces
  • 2 tsp olive oil
  • 1 red onion, halved, cut to wedges
  • 2 cloves garlic, crushed
  • 1 chilli, deseeded, finely chopped
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 800g canned chopped tomatoes
  • 150g baby spinach
  • To Serve (optional):
  • 1/3 cup natural yoghurt
  • 2 tblspo chopped coriander

Directions

  1. 1. Cook potatoes by preferred method until tender.
  2. 2. Heat oil in frying pan on medium heat, add onion, cook until soft. Add garlic, chilli, garam masala and cumin, stir 1 min until aromatic.
  3. 3. Stir in tomatoes and reduce heat to low. Simmer 15 mins or until thickens. Stir in potato then simmer further 5 mins.
  4. 4. Add spinach and remove from heat. Stir until spinach just wilted.
  5. 5. Divide into serving bowls then top with servings if desired
